Sometimes it can be very difficult to find recipes when you suffer from multiple dietary restrictions at once. Having only one restriction can be quite difficult, but in my house we have someone who currently has three: candid, anti-inflammatoryand dairy free. This really narrows down our options when grocery shopping, but we’re making the most of the situation with great tasting recipes that cater to our every need!

One of my favorite recipes is my Tuna Chickpea Salad recipe. It’s fast, easy and satisfying. What more can you ask for from a healthy meal?

Chickpea and Tuna Salad

Serves 1-2

What do you need:

– 1 Can of Tuna (Starkist Brand in water works very well)

– 1 Can of Chickpeas (Also known as Chickpeas)

– 1/4 Cup Purple Onion

– 1 clove garlic

– A handful of baby spinach leaves

– 1/4 teaspoon of cayenne pepper

– Salt and pepper to taste of preference

How to do:

Fine garlic and diced red onion. In a medium bowl, add the drained can of tuna and olive oil and mix well. Add the chickpeas, garlic and onion next and mix well. Add cayenne pepper, salt, and pepper, and mix one more time. Spread spinach evenly around the plate. Empty the contents of the mixing bowl into the center of the spinach and enjoy!

My Side Notes on Elimination Diets

Always be careful when buying. That’s my number one thought in my head every time I’m about to buy food. You should be very careful when reading ingredient lists because companies can be misleading with their wording. Find out what it means to be dairy free, without gluten, Sugarfree, non-GMO, organic, etc. There are some cases where an article will say “dairy-free” or “vegan” and actually list casein as an ingredient (casein is a protein in milk that many people are allergic to, sometimes severely). One of my biggest mistakes was when I started the candida diet and switched my regular sugar to stevia. I thought stevia is stevia no matter the brand and i would be in the safe zone to use it in recipes. After a while, I decided to do some more research and spoke to a naturopath who mentioned how certain brands would sneak in an ingredient known to cause problems with candida patients. As soon as I pulled the bag of stevia out of my pantry, my heart dropped. All these weeks that I thought were pure progress were a lie. So please be careful. Make sure the ingredients are whole and pure.
